Product & Quality

What's the difference between Signature and Organic?

Signature is Chetoui, picked early for intensity; COA-verified at 1,000+ mg/kg polyphenols. It's a finishing oil, used a few drops at a time, never over heat. Organic is Chemlali, our everyday cooking oil, COA-verified at 400+ mg/kg polyphenols with acidity under 0.3%, dry-farmed, and certified organic since 2001.

Are the flavored oils infused or co-crushed?

Co-crushed. The fruit or pepper is pressed together with the olives in the same batch, not added as flavoring after the fact. Lemon, Green Chili, Orange, and Rosemary are all made this way.

What certifications do you carry?

USDA Organic, Halal, and Kosher, across every SKU.

Can I see a Certificate of Analysis (COA)?

Yes. Email hello@firmaflavors.com and we'll send the current COA for any SKU.

What is dry farming?

Single-origin Tunisia, sourced from roughly 200 farming families. We're a third-generation operation, Our grandfather built the first mill in the region.

Where are the olives grown?

No irrigation — the trees rely on natural rainfall alone, which lowers yield but concentrates flavor. Our Chemlali is dry-farmed. Full explainer on the blog.
